In The Kitchen – Vegan & GF No Bake Date Squares

The name of this dessert sounds pretty much unbelievable right? The crazier part is they are SO GOOD, and good for you!

Sometimes I think the word dates freaks people out, the idea of plums comes to mind, and dates are so far from that. They are nature’s glorious treat to sweet tooths like me, and the way they are used in this recipe makes for an oh-so-creamy, beautifully sweet, toffee-like treat that I just can’t stop eating.
AND they’re healthy, whaaaat?!

I will definitely be whipping up a second batch this weekend, my mother in law, (a fellow sweet tooth) will be here and I can’t wait for her to give this treat a try. I promise to only taste test one-ish squares. Give this treat a try, it won’t disappoint, remember they’re healthy. Original recipe found here.

You’ll Need :
1.5 cup almonds
1.5 cups
1/2 tsp salt
10 pitted Medjool Dates
1/4 coconut oil

25 or 2.5 cups of pitted Medjool dates (chopped)
1/2 cup of water

Take all the ingredients for the crust and process it in a food processor. Scrape down the sides from time to time if need be. I didn’t have to chop my dates prior, but you may. Use a bit more oil if need be. Once done, save 3/4 cup of the mix and press the rest firmly into a parchment lined baking dish. I used an 8×8 so my crust was pretty thick which I think turned out well.

Next process the dates and the water till it forms a paste. Scrape down the sides if needed and process till a thick paste forms. Spread this paste on top of the crust.

Sprinkle remaining 3/4 cup of crust on top and refrigerate overnight. You can refrigerate for a few hours but I think the flavor and consistency is better with an overnight cool down.
