On my attempt to eat as raw as I can with as much distance as I run, I’ve embraced a new food friend, chia. She’s down-to-earth, easy to cook with, and makes me feel energized and FULL! I can pretty much eat this combo for breakfast, lunch and dinner, it’s that good.
Though I doubt my deep love for oatmeal will ever go away, chia has been a nice change. Try this amazing overnight pudding to add a little change to your regular routine. It has a gorgeous smooth texture similar to tapioca pudding, but with a grainier feel. I’m also digging the overall glow I get just from eating it. Good for you and your skin, yes please!
Coconut-Vanilla CHIA pudding:
Coconut milk (raw preferably)
Sweetener of choice (maple syrup, honey, agave syrup)
1 Banana, optional
Take 1/4 cup of chia seeds and 1 cup of coconut milk and mix together. Add in 1/2 a teaspoon of vanilla extract, totally optional, but it gives it a beautiful aroma. Let this refrigerate over night. In the morning stir in a drizzle of your preferred sweetener, I used honey. Then I added in some sliced banana. Done!
